Baked in the oven, made with light or fat free mayo and artificially sweet honey, this is a diabetic friendly recipe.
Served with a salad and a fruit, this is a full meal deal !
Ingredients:
6 Tbsp light or fat free mayonnaise
1 Tbsp Dijon mustard
2 Tbsp artificially sweet honey or pancake syrup or jam or jelly
1 pound boneless skinless chicken breast, cut into strips
1 1/2 finely crushed corn flakes or whole wheat bread crumbs
Procedure:
Preheat oven to 425 F. Combine mayo, honey (or alternative) and mustard in a small bowl and mix well. Reserve
half of this mixture to use as a dipping sauce for chicken after it is cooked. Coat the chicken fingers with the remaining
half of the mixture and then roll each finger in the crumbs. Bake in an ovenproof dish for about 10 minutes or until
chicken is thoroughly cooked.
