Wash, trim and grate or shred. Pack into zipper type freezer bags, squeezing out as much air as possible, mark
with quantity and content and freeze. This is excellent for quick breads, muffins, quiches, frittatas, pancakes
Slice into 1/2 inch thick slices for fried zucchini, 1/4 inch thick slices for zucchini au gratin or scallop
Cut into 2 inch wedges for tomato, zucchini bake and other casseroles
